1. Super-easy peanut butter chocolate chip cookies
Ingredients:
1 egg
½ cup sugar
1 cup smooth peanut butter
1 tbs all-purpose flour
1 cup chocolate chips (milk/semi-sweet/dark/white)
Directions:
– Preheat oven to 350°F
– Mix together 1 egg and ½ cup of sugar until frothy
– Add 1 cup of peanut butter, mix until smooth
– Add 1 cup of flour
– Mix in 1 teaspoon of flour and sugar to flatten (if necessary)
– Add chocolate chips and mix
– Bake at 350 degrees until slightly browned around edges (approximately 8-12 minutes)
– Enjoy!
2. Chewy, Chocolaty Mini Brownies
Ingredients:
2 semi-sweet chocolate baking squares, coarsely chopped
1 cup of sugar
2/3 cup all-purpose flour
½ cup cocoa, sifted if lumpy
¼ tsp salt
1 large egg
2 large egg whites
2 tbsp. canola oil
Directions:
– Preheat oven to 350°F (175°C)
– Put chocolate into small microwavable-safe bowl
– Microwave, uncovered, on medium for about 90 seconds, stirring every 30 seconds until almost melted
– Stir until smooth
– Add sugar, flour, cocoa, and salt into medium bowl and stir
– Whisk eggs, oil, and melted chocolate into small bowl until combined
– Put mixture from small bowl into medium bowl
– Stir until moistened
– Fill 24 greased mini-muffin cups ¾ full
– Bake for around 15 minutes until center of brownie comes out moist but not wet (use pick or fork)

3. Lemony-Lemon Cake
Ingredients:
1 cup sugar
1 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
Lemon unsweetened Kool-aid drink powder
½ cup shortening
4 tsp of water
Directions:
– Preheat oven to 350°F (175°C)
– In a medium bowl, combine sugar, flour, baking soda, salt, and drink powder
– Stire with a whisk until blended
– Cut shortening until evenly distributed and mixture resembles corn meal
– Grease and flour a 4 inch miniature cake pan
– In a small bowl, combine cake mix and water
– Stir wit ha fork or spoon until blended and smooth
– Pour mixture into prepared pan
– Bake 12-13 minutes in oven (or until
– Remove from oven and cool in pan for 5 minutes
– Enjoy!
4. Rice Crispy Treats
Ingredients:
4 tbsp butter
10 oz. marshmallows or 4 cups miniature marshmallows
6 cups crispy rice cereal
Directions:
– Spray a 13 x 9 pan with cooking spray
– Line the pan with parchment or waxes paper for easy removal
– In a 3-quart saucepan, heat butter and marshmallows over medium heat until melted
– Remove from heat, and immediately stir in the cereal using a spatula
– Spread into the prepared pan and flatten
– Let cool and harden completely
– Cut into squares and enjoy!
